Avocado is a significant dietary staple of mine. Whether it be on toast, in a smoothie, in a salad, as part of a Mexican feast…I just love it! So I thought I would share my top three avocado dips.

I love to have the salsa alongside grilled chicken or fish. I love the guacamole with chopped carrots or corn chips. Lastly, the creamy avocado dip is probably best for kids as it is a smoother consistency and the flavour is slightly dulled by the yoghurt/sour cream.

Mango, Avocado & Lime Salsa

Ingredients:

  • 2 small mangoes or 1 large mango
  • 1 ripe avocado
  • 1 punnet grape tomatoes
  • 1 lime
  • 1 palmful fresh coriander (you could use basil or mint if you preferred)

Method:

Remove the mango and avocado flesh, dice and add to a bowl.

Dice the tomatoes and roughly chop the coriander and add both to the bowl.

Drizzle with the fresh lime juice and gently mix.

Guacamole

Ingredients:

  • 2 ripe avocados
  • 1/2 red onion
  • 2 tomatoes
  • 1 lime
  • 1 palmful fresh coriander
  • Salt and pepper, to taste.
  • Ground cumin, to taste.

Method:

Remove avocado flesh and mash into a bowl.

Dice the onion and tomatoes and roughly chop the coriander, and add to the bowl.

Season with salt/pepper and cumin. Drizzle with the fresh lime juice and gently mix.

Creamy Avocado & Yoghurt Dip

Ingredients:

  • 2 ripe avocados
  • 1/2 cup Greek yoghurt (use coconut yoghurt for dairy free alternative or sour cream if you prefer over yoghurt)
  • 1 clove garlic
  • 1 lime
  • 1 palmful fresh coriander
  • Salt and pepper, to taste.
  • Ground cumin, to taste

Method:

Add the avocado flesh, yoghurt, garlic and coriander to a blender. Season with cumin and salt/pepper and drizzle with the juice of the fresh lime. Blend until a smooth consistency, transfer to a bowl and serve immediately.

Enjoy with…

All of the above dips can be enjoyed with corn chips, pita or crackers, grilled chicken or fish, in a salad, with a stir fry or curry…the options are endless!

A sprinkle of cayenne or some chopped jalapeños can be added to each recipe if you like heat.
