Sesame salmon & brown rice bowls // While I do love cooking, at the end of a big day, I aim to cook most dinners within 15-30 mins from start to eating! Rice bowls are something we love and consume every week, swapping out the protein and sides for different flavour combinations. This sesame salmon bowl is super easy and so yum. Complete with sautéed broccoli, brown rice and green leaves. Want to make it?
SESAME SALMON BOWL
2x skinless salmon fillets
1x head broccoli, sliced thinly
250g sachet brown rice*
2T Tamari sauce
1T Honey
1x Lebanese cucumber, sliced thinly
1x cos lettuce, shredded
1/2 avocado, sliced
Cashews, to garnish
Cut the salmon into smaller bite sized pieces and add to a bowl. Add the tamari, honey & sesame seeds. Stir to coat salmon well. Once marinated, add the salmon to an air fryer and cook for 7 minutes at 180deg. If you prefer, cook the salmon in a pan on the stove top. While salmon is cooking, sauté the broccoli in olive oil, salt & pepper in a pan on medium heat. Heat the brown rice and divide the rice and cooked broccoli between two bowls. Add the lettuce, cucumber & capsicum. Add the salmon when it’s ready. Garnish with avocado and cashew nuts. Fresh herbs like parsley or coriander work well too.
*Fresh rice always amplifies a rice bowl, but I’ve leant on the quick version here and used a rice sachet. I usually remove the rice from the sachet to a bowl and heat as per the instructions on the packet.
