The Humble Side Salad – 1st Edition September 18, 2016 0 comment by OHAlexH The Humble Side Salad - 1st edition Save Recipe Print Recipe IngredientsSeveral big handfuls of mixed greens or spinach3 sprigs of spring onion diced3 sticks of celery diced3 tomatoes diced1 zucchini cut into discs1 yellow capsicum sliced½ avocado diced1 knob goats cheeseAs much basil as you like!InstructionsPlace leaves in a bowl or on a platter.Microwave or blanch zucchini until tender and then run under cool water.Add spring onion, celery, tomatoes, capsicum, avocado and zucchini.Top with goats cheese and basil.NotesI’m not usually one to dress my salads but a drizzle of extra virgin olive oil would work wonders here.
