The Humble Side Salad - 1st edition

  • Several big handfuls of mixed greens or spinach
  • 3 sprigs of spring onion diced
  • 3 sticks of celery diced
  • 3 tomatoes diced
  • 1 zucchini cut into discs
  • 1 yellow capsicum sliced
  • ½ avocado diced
  • 1 knob goats cheese
  • As much basil as you like!


  1. Place leaves in a bowl or on a platter.
  2. Microwave or blanch zucchini until tender and then run under cool water.
  3. Add spring onion, celery, tomatoes, capsicum, avocado and zucchini.
  4. Top with goats cheese and basil.


I’m not usually one to dress my salads but a drizzle of extra virgin olive oil would work wonders here.

Pump up the protein by serving with some steamed fish.
