You should recognise a theme amongst my social media pages – SALADS. I love salad. I love making them and I love eating them and I love that the ingredients can mirror the rainbow.

For the next month, I challenge you to add a salad a day to your daily diet. By salad I mean a mix of vegetables containing at least 2 cups raw greens and 5 other vegetables of different colours. This is not hard and should not be seen as a chore. It will help our bodies overcome the onslaught of festive food we have indulged in over the past few weeks. You can have it at breakfast, lunch or dinner or as a snack and bonus points if you have more than one! This isn’t a competition, this is something you can do yourself to increase your own self-awareness about what you are putting into your body to fuel it.

By all means, if you do want to flaunt your creation, tag #optimahealth with your image so that I can see all your lovely creations.

Keep posted too as I will be adding an extra challenge each week to spice things up a little. To start though, lets just focus on the simple things as I’ve said above.
