So fresh and versatile, this little rainbow salsa is the perfect addition to your next bag of corn chips or barbecued meal.

Mango, Avocado and Lime Salsa

Ingredients

  • 2 small or 1 medium mangoes
  • 1 medium avocado
  • 1 handful grape, mini roma or cherry tomatoes
  • Coriander, to taste
  • 1 lime, squeezed

Instructions

  1. Dice the mango, avocado and tomatoes and combine in a bowl.
  2. Thinly slice the coriander and add to the same bowl.
  3. Dress with the fresh lime juice.
  4. Enjoy with corn chips or crackers, grilled chicken or fish, in a salad, with a stir fry or curry etc...
