As we are on the topic of mangoes (the current food of the week), I thought it would be fitting to share this most simple but delicious recipe that you can use all summer long with various different meals. So fresh and versatile, this little rainbow salsa is the perfect addition to your next bag of corn chips or barbecued meal.
Mango, Avocado and Lime Salsa
2 small or 1 medium mangoes
1 medium avocado
1 handful grape, mini roma or cherry tomatoes
Coriander, to taste
1 lime, squeezed
Dice the mango, avocado and tomatoes and combine in a bowl.
Thinly slice the coriander and add to the same bowl.
Dress with the fresh lime juice.
Enjoy with corn chips or crackers, grilled chicken or fish, in a salad, with a stir fry or curry etc...
